-1/2 tsp vanilla extract
-2 c coconut milk
-pinch of sea salt
-stevia (to taste)
-1/2 c chia seeds
-1/3 c berries (optional)
cinnamon cocoa granola (see recipe, optional)
 
Combine ingredients vanilla through stevia, in a medium sized bowl. Then, gradually whisk in chia seeds making sure clumps do not form. Cover with plastic wrap and refrigerate mixture 2- 2 1/2 hours until chia seeds have expanded and formed a pudding-like consistency. Top with berries and granola— enjoy!
